The January 2010 Daring Bakers’ challenge was hosted by Lauren of Celiac Teen. Lauren chose Gluten-Free Graham Wafers and Nanaimo Bars as the challenge for the month. The sources she based her recipe on are 101 Cookbooks and www.nanaimo.ca.

First up, the Graham Wafers. I made the wheat flour version, since gluten-free baking mix is a little out of my pricerange on my current baking budget. They turned out crisp and so very tasty. I probably could have eaten the entire batch with a gallon of milk - mmm...I will definitely be making these again.

I made tiny graham wafers to go on top of the Nanaimo Bars. I had been warned that a 1" x 1" square of these incredibly rich concoctions would be enough to satisfy the sweetest sweet tooth, so my tiny wafers were the perfect measuring tool.

Here's how the bars turned out:
